I work on a variety of projects focusing on foodborne pathogens present in the poultry GI tract. We strive to find the mechanism of antibiotic resistance transfer, as point mutations and gene aquisition, in Campylobacter spp. throughout the environment and the poultry industry. My thesis is on the interplay of pathogen type and presence, microbial community 16S analysis, and immunological factor in the poultry GI tract. This is accomplished through the application of molecular biology techniques, metagenomic analysis, and good microbiology practices.

The Dudley Lab At Penn State

Work in the Dudley lab involves contact with microbial pathogens on a day-to-day basis. In order to safely work here I had to become proficient in standard lab techniques such as PCR, vector cloning, and gel electrophoresis. Beyond standard techniques I have also learned to isolate and extract DNA from various bacteria (mostly Salmonella and E. coli), prepare DNA for sequencing, and interpret results obtained from sequencing. Through work with Dr. Shariat, I have been able to research innovative subtyping methods for Salmonella, notably CRISPR MVLST, and investigate the link between Salmonella CRISPR systems and antibiotic resistance. I have also developed critical thinking skills through designing experiments and critiquing scholarly journals.

Baking Research And Development Intern

The internship worked with the Baking Core team on possible new products. Over the course of the internship I took on a variety of projects from investigated ancient grain utility in dry mixes and evaluated sorghum flour utility to investigating “holistic” or “natural” sweeteners. I performed an analytical overview of the procedures currently used in the lab and made recommendations about their methods. I formulated new products for the Baking teams future endeavors in the dry mix arena. I mostly worked with cookies and muffins but also dabbled in breads.

Foodservice covers a wide range of products and sizes. The Foodservice team provides product for both front and back of house use. This variety made the work I was able to do at the internship exciting and challenging. I worked on several projects including any projects a coworker needed help with in addition to my main projects. I mainly worked on reformulations of sugar free products with new ingredients in order to meet the FDA Acidified Foods Standards. In order to remain sugar free with the new ingredients and calculate nutritional information I used GENESIS frequently. I also established benchmarks for tolerance testing for a variety of products, performed pilot plant trial runs and carried out products research testing and focus groups for tea.
