Just a brief outline of myself,i start out my career in the merchant navy from Sept 1981- Nov 1992 as a apprentice chef and worked my way up from there. I left the navy to immigrate to Australia where i started to work in Hotels and Restaurants in the capacity of 2nd Chef to Head Chef. I then decided to move into the mining sector where i have worked in numerous mining camps through out Western Australia.I have been responsible for the day to day running of numerous kitchen throughout WA ranging from 100 - 1000 man camps. Staff levels have ranged from 6 - 24 staff with roster varying 2 -1, 4 -1, & 6 - 1 . I have the ability to liaise with senior management as well as the client to achieve good results and Food Costs, menu planning (Cycle) and Dietary requirements which was paramount to my success. I take pride in my work to achieve the goals that the company wants with safety at the forefront of running a successful Kitchen. I think well under pressure and communicate with staff accordingly.
