This position requires an in depth knowledge of all beverage products and ability to sell, training servers, inventory, ordering, and bookkeeping for a profitable beverage program while also acting as a floor supervisor for both lunch and dinner service, opening and closing the restaurant and leading service preshift. In addition to the service preshift I plan 30-minute daily wine education preshifts for servers. I maintain a 300 label list Italian wine list with 28 by-the-glass options including upper end Enomatic and Coravin selections by the ounce.

I was hired on as a food runner/ back server. After displaying passion and eagerness to learn I was promoted to Taverna Server and then Assistant Sommelier. My schedule was split between these two positions during the last part of my tenure. As a Taverna Server I was responsible for serving an 8 table section in the bar area and maintaining service standards expected at a Mario Batali Steakhouse on the Las Vegas Strip while assisting bartenders with traditional bar back duties. As an Assistant Sommelier I would assist guest in recommending wines from a 700 label international wine list to guests and providing gueridon wine service.
