Initially hired as a General Manager in Tallahassee, Florida. Assisted in the construction of the first restaurant location from the ground up and a full remodel of the second location at which time I was promoted to Area Manager. Corporate owners of the Original Italian Pie concept contracted my services all over the Southeast as far north as North Carolina and as far east as Louisiana where I was responsible for overseeing the construction and start up of several Italian Pie restaurants. Duties required including, but not limited to setting up contractors, networking computers and POS systems, vendors, fully training all staff for the back and front of house in all positions including General Managers, training materials, policies and procedures for new locations, hire and train staff, creating complex and interactive MS Excel spread sheets including P&L for tracking sales and cost purposes. Create scheduling programs with built in budget control. Designed floor charts using MS Power Point. Promoted to Director of Operations in 2005, which lead to a transition to The Original Italian Pie of Warner Robins, Georgia. The owner of this franchise also desired to begin a different concept, Flavors Bar & Grill. For this concept I was responsible for menu design, including recipe construction, plate presentation and graphic design of the physical menu guests read, both dine-in and carry out.
