Partnered with my father to create this new concept. Hank's Haute Dogs is a new innovative concept that combines knowledge of fine dining with the comfort of fast food. Focusing our attention on gourmet sausages, we have been able to create excitement among the restaurant industry. Since it's opening in June of 2007, Hanks has garnered much fame and recognition.

Chef Matt McLinn, Dave Berntzen and Dave Hershey opened Methode Bistro in May of 2006. Almost immediately, Methode Bistro gained interest by the surrounding public. Known for his knowledge in European cuisines, Chef McLinn's intent was to provide his clientele with a seasonally changing menu that incorporated local and exotic ingredients.

Spring is Chef Shawn McClain’s award winning New American restaurant. Chef McClain has been a leader in cutting edge restaurant trends since his tour as Chef in the kitchen of Trio Restaurant. At Spring, Chef McClain and partners Sue Kim and Peter Drohomyrecky emphasize seafood in it’s beautifully designed Asian inspired dining room. The James Beard Foundation nominated Spring as the “Best New Restaurant” of 2001. Chef McClain’s most notable awards; “Best Midwest Chef” by the James Beard Foundation in 2006 and “Rising Star Chef of the Year” at the inaugural Jean Banchet Awards for Culinary Excellence in 2002.

Trio restaurant was opened by my father, Henry “Hank” Adaniya. It was a world-renowned restaurant that achieved many accolades over its’ twelve year life. It was known for being the starting point for many revolutionary chefs and standards. Throughout its’ life Trio acted as a blank canvas for world renowned chefs Rick Tramanto, Gale Gand, Shawn McClain, Grant Achatz and Dale Levitski. Amongst the long list of accolades, Trio’s most coveted award was to be one of fourteen restaurants in North America to receive The Mobil 5-star award in 2005. While the doors at Trio closed in 2006, it still continues to inspire to this day.
