With over eight years of research experience in food science and four years experience in higher education teaching, I have recently started a new position as Assistant Professor. My current research is focused on fermentation and alternative protein sources. Prior to this position, I was a Postdoctoral Research Fellow at University of Saskatchewan, where I worked on developing novel and sustainable protein ingredient technologies from oil seeds. My research focus was to enhance the functionality, quality, and nutritional value of plant-based protein products, and to create new opportunities for the food industry and consumers.I have a Ph.D. in Food Science from University of Manitoba, where I specialized in the isolation and characterization of cholinesterase inhibitory peptides from plant protein sources. These peptides have potential applications in Alzheimer's disease prevention and treatment, as they can modulate the activity of enzymes involved in cognitive decline. Also, during my Ph.D., I studied the effect of different extraction and pretreatment technologies on the functional properties of plant proteins. I have also gained proficiency in various analytical and microbiological techniques, food safety and quality control, and curriculum development and teaching. I have authored multiple publications, fact sheets, and received several scholarships and awards for my academic and research excellence. I am passionate about finding innovative solutions to address the challenges and opportunities in the food sector, and I am eager to contribute to the advancement of science and technology in this field.

Optimized enzymatic digestion of yellow field pea proteins into protein hydrolysates with ability to inhibit cholinesterase activity.4. Fractionated the enzymatic pea protein hydrolysates into different peptide sizes using membrane ultrafiltration and confirmed their cholinesterase-inhibitory properties.5. Purified and determined the structural characteristics and kinetic mode of cholinesterase-inhibitory peptides. 6. Predicted the structure-function relationship of cholinesterase-peptide complexes using molecular docking assay and Quantitative Structure Activity Relationship (QSAR) studies via Partial Least Squares (PLS) regression.7. Determined the functional and physico-chemical properties of oat protein concentrate extracted by isoelectric precipitation and membrane separation (molecular weight by FPLC, surface hydrophobicity and dichroic spectra) as novel ingredients in food systems.8. Supervised and trained three undergraduate, two masters and three PhD students in different protein analysis, processing technologies and the operation of lab equipment.9.
