As a Maitre'd, I help the event coordinator run wedding ceremonies and receptions, I have run also had the chance to run ceremonies on my own assist in wedding ceremony rehearsal. To prepare for the reception, I assign tasks for the servers to complete such as filling water glasses and assign server sections. During the cocktail hour, I am checking on the bride and groom bringing them hors d'oeuvres and making sure the bartenders are okay and that they do not need more supplies. Starting dinner service I guide and place dishes and right person seat during dinner, I am assigned to server head table using tray service, I have also been taught how to expo dinner service. To end the night I am to set up the late-night table and make sure that the food is out on time shown on the function sheet, I assign breaks times for servers and bartenders. Lately, I manage the closing checklist for servers and bartenders to make such everything is closed down for the night and lockup course at the end of the night.
