I'm the main solo Breakfast Chef, I'm catering for between 20-100 covers, all plated, I write all my orders down for the Senior Chef, clean down the kitchen before lunch service and help the main kitchen with preparation for lunch/evening services. I also do all my preparation for my section before I go home, I also prepare all the continental/cold.
Sous Chef
I would Cover the head chef's days off, helping with all the paperwork, allergens, opening and closing checks, training staff and menu creation and costing.
Breakfast Chef/Chef De Partie
I started as the main solo breakfast chef plating for 50-60 covers, if higher number of covers we would do a buffet style, and then I went back into the kitchen doing 12-9 ISH doing the ala carte menu.
Sous Chef
I would Cover the Head Chef's days off, lots of stove time. Fresh food preparation, cleaning and paperwork. Minimal staff delegation due to small team.
Chef De Partie
I moved back to my hometown of Falmouth. Here I was making fresh stone-based pizzas. CDP level.

8-month temporary contract.I would assist the head chef with menus, costing, training staff and jumping in wherever they needed me to.

My first Head Chef job. Here I worked alongside the Owner Mike. I did do my own ordering, cleaning, cooking and staff delegation.

I got promoted to Senior Sous Chef and worked alongside the operations manager in the kitchen.There was no Head Chef when I got promoted from Sous to Senior Sous, but I would help with menus, costing and staff development. I mainly ran the stove/sauce side.
Sous Chef
This is where I finished my diploma in professional cookery, my first Sous Chef role. Here I learnt how to be sous, under their main head chef who ran the sister restaurant alongside the pub's head chef with menus and getting as much stove time as possible.

This is where I started my Diploma in professional cookery. I would make sandwiches, garnishes and man the fryer section.

My first proper salary job. I made sandwiches, and desserts and then manned the starter section with the fryers.

This was my summer job when I was still at school, I then came back after my studies had finished, and I mainly done the homemade chips, 20x 20kg bags of potatoes up two flights of stairs, I'd rumble them all then chip them all, when it was quiet I would clean the store room, decant products from cardboard and swept the floors.
