Responsible in building food and beverage opportunities within the company's profolio of hotels. Businesses included fine dining restaurants, express casual/grab n go, lobby bars, lobby marts, banquets, catering and in room dining. Responsibilities included creating original concepts or adhering to hotel brand standards, building the budgets and pro forma P&L for board approval, working with interior designers/engineers/architects/contractors on building out the space, leading the chefs and bartenders in creating the menu, putting together the marketing and PR strategy for grand opening, recruiting managers and head chefs, and monitor sales performance to make post opening menu adjustments to improve operation efficiency, quality standards and profit margin.
