Meet prospective catering clients, make recommendations for events as requested. Maintain a well organized catering storage facility; ensure proper controls are in place. Prepare and document all functions with appropriate event orders; work closely with Accounting to ensure timely payment and deposit for catering functions. Insure food service is prepared and delivered on time and in accordance with acceptable quality and quantity standards established; perform food prep duties, working closely with chefs. Maintain inventory and par system for ordering. Attend off-property catering events to ensure function exceeds the guest's expectations. Communicates with customers in a timely and professional manner; maintains consistent communication with customer to insure a smooth and successful event. Maintain updated training manual, policies and procedures for all main catering tasks and areas of responsibility. Assist in managing all Food and Beverage outlets. Provide adequate training and tools for Team Members so they can effectively perform the necessary job duties. Responsible for staffing, evaluating performance, scheduling, recommending and administering discipline when necessary. Verify and ensure department is in accordance with direction given by the Director of Food and Beverage and Assistant Director of Food and Beverage as well as Casino Policies and Procedures, rules and regulations. Ensure proper operating expenses. Meet guests to resolve concerns. Ensure compliance with casino wide and Human Resources policies and procedures. Act as a role model for Team Members under Supervision by focusing on the demonstration of positive action, behavior, attendance, work ethic, and guest service. Directly oversee the hiring and development of approximately 80 employees in the Bingo Concessions, Employee Dining Room, Casino Concessions, Poker Concessions, and Catering Departments.
