    Having previously helped launch coffee brands in Glasgow and Edinburgh, I embraced the opportunity to work for successful Edinburgh based independent businessman Jonathan Sharp. I have managed his three flagship stores, taking every opportunity to understand how he has built his business from one small cafe unit to six unique hospitality brands across the city. My duties included training staff and liaising with suppliers, as well as ensuring quality service and produce from both the kitchen and the coffee bar. During this time, I took the responsibility of creating and managing the music playlists for all six shops, tailoring them to their respective image and clientele to establish an overall atmosphere and brand identity.In 2013 I approached Tommy Sheppard of ‘Salt and Sauce Productions’ with the interest of bringing the ‘Kilimanjaro Coffee’ brand to his Assembly Rooms/Spiegel Terrace project on George Street. I worked closely with Mr. Sharp and Mr. Sheppard to ensure that our menu and quality of service reflected the vision for the George Street location. We were afforded a 4x4 metre hut and ran an unprecedented trade for the whole of the Fringe, surpassing all of Mr. Sharp's other businesses in gross takings, while enjoying rave reviews from Spiegel staff, performers and customers alike.
