Catering DepartmentResponsibilities: Responsible for £4 million of food and non-food purchasing for a multi site retail catering operation throughout the UK, with sales exceeding £9 million. Other key duties included: menu development, logistic and the formation of catering policy along with its operational implementation as the deputy to the Retail Catering Controller. Achievements: Renegotiation of purchasing contracts increasing gross margin by 2% including retrospective rebates in excess of £120,000. Consolidations of supplier base, removing local suppliers to increase product quality, reduce costs and increase operational efficiency.Implementation of new menu within the first five months.Opening four new concept restaurants within four months.
