I was the project leader of Innovate UK project number 53872.The project's aim was to develop antimicrobial biodegradable packaging for takeaways and bakeries that can be produced from plants. This packaging can substitute current single-use plastic packaging.The anti-microbial properties would extend the shelf-life of the packed food. Discarded packaging can decompose in landfills.

Short project focused on analysing mixed linked beta-glucans, extracted from cereal and fungal matrices under various conditions, by asymmetrical flow field-flow fractionation (AF4).

Postdoctoral Research Associate with Professor Paul Dupree at Department of Biochemistry.Research project: Improving biomass processing and hexose content by altering glucomannan quality and quantity.• Understanding the structure and function of galacto(gluco)mannan in the plant cell wall and the impact of its in vivo manipulation upon biomass improvement for bioethanol production yield.• Developed a comprehensive methodology to follow glucomannan biosynthesis including the study of NDP-sugars as precursors by LC-MS/MS, structural study of the polymer in Arabidopsis thaliana WT and mutant plants and across different plant species using enzymatic analysis followed by polysaccharide analysis by carbohydrate gel electrophoresis (PACE) and mass spectrometry.• The project revealed new insights into NDP-sugar pools and into the structure of galacto(gluco)mannan, and proposed the importance of the polymer in cell wall networking.

As team leader, I drove the project which involved the coordination of various departments within the food processing company. I was called upon to design a new product and oversaw its successful final release on the market.
