The European Food Safety Authority was set up in January 2002, following a series of food crises in the late 1990s, as part of a comprehensive programme to improve EU Food Safety, ensure a high level of consumer protection and restore and maintain confidence in the EU food supply.Risk Assessment:EFSA is an independent source of scientific advice for risk managers and policy makers and undertakes risk assessment via a series of expert panels populated with top scientists from throughout the EU and further afield. EFSA's remit covers food and feed safety, nutrition animal health and welfare, plant protection and plant health.Risk Communication:EFSA is responsible for communication the results of all its scientific deliberations.

The Food Safety Authority of Ireland (FSAI) was set up in response to the BSE crisis to be ascience based consumer protection agency. It was the first independent food safety agency in the EU preceding the UK Food Standards Agency by one year. It has been a model for many other jurisdictions with a remit for risk assessment, risk management and risk communication. Like in many other countries at this time the frontline inspectorate overseeing the food chain was very fragmented with many agencies and bodies overseeing elements of the chain with minimal communication and collaboration. We developed a novel system of co-ordinating the various agencies to deliver a seamless inspectorate with no gaps in the continuum from farm to fork by creating service contracts with the array of players, akin to FSAI being the conductor of the orchestra and the contracts were the script music. Since the outset it has operated with openness and transparency and has a very proactive approach to communication with the public, the food industry and the media.
