During this period we developed the first web-based measurement tools for tannin and polyphenols in wine, spectroscopy tools for determining wine style and composition, a simulator to better predict fermentations and the first economically feasible enzyme-based alternative to bentonite (clay) for preventing haze formation in white wine.

Research ChemistThe Australian Wine Research Institute May 2003 - Sep 2007My focus was the better understanding the role of phenolics in red wine, particularly tannins. During this time the team I established developed simple, rapid methods for measurement of tannins in red grapes and wine. We also, for the first time, comprehensively surveyed Australian wine tannin concentrations to work out what's high or low.
