Ninja Bar was an Asian (especially Japanese, but not exclusively) influenced cocktail bar above Yum Yum Ninja Pan Asian Restaurant in the centre of Brighton.We were heavily whisky led with around 40 whiskies on the back bar, including 10 Japanese whiskies. We also carried a selection of Shochu and around 10 different Sake.

I worked as the "face" of Tuaca; travelling the UK introducing this liqueur to both the on-trade and consumers. I ran training sessions for bartenders where I taught them the history and legend of the brand and showed them the possibilities of using Tuaca in mixed drinks and cocktails. I also advised on brand image, direction and strategy.
Increased the profile and profitability of this lovely little cocktail bar year in, year out.
I started working at the Hanbury at it's re-launch under Chris Edwardes. After a year I moved into the role of General manager; in charge of all aspects of running a busy bar / supper club and events venue. In this time I organised internal staff training sessions, cocktail competitions, spirit and cocktail training for the on-trade and consumers, and over.
I helped run this popular, small cocktail bar in the centre of Brighton. Here I learned the practical side of serving a large number of high quality drinks very quickly and how to build the clientele that *you* want in your venue. I also started getting involved in cocktail competitions.
Malmaison is where I learned bar "Silver Service". I was trained in the wine, spirits and cigars and the classic ways of making Cocktails. By the end of my time at Malmaison, I was supervising the bar.
