Bringing a wealth of experience from the cheffing, catering, seafood and logistics industries, my focus is on ensuring our clients get the absolute best quality and value at every event we manage.

As Director and Owner of Coastal Water Seafoods, I bought a 2400m block of land with an existing Abalone and Lobster exporting factory that was in receivership. Over the following three years I developed the business to the point when it was returning $14m pa exporting abalone and lobster to China. I resigned as a director of the business on the death of my brother to return to Sydney to care for my children.

Set up an export and local distribution company of fresh and frozen seafood. Built the business and sold it as a going concern in order to start Coastal Water Seafoods in Tasmania.

I established a fresh and cooked seafood store catering to the local public in the Eastern Suburbs. I introduced created pre-made dishes for people to take home that had never been done before: seafood pies, marinated octopus, marinated fillets of fish. Dishes people could take home and put straight in the oven, as well as offering a catering service.

I spent 17 years with Qantas, starting with a commercial cookery apprenticeship in Sydney, advancing to Chef, which included a year being trained at the world renowned Swiss MovenPick Hotel at Cloton Airport in Zurich specialising in seafood. Over the next number of years I specialised in food logistics and support, overseeing the provision of catering to multiple airlines departing from Sydney International Airport.
