Born in Indiana, Peter moved around from Chicago to Southern California to Las Vegas which he has called home now for the last 19 years.  Peter joined the Marine Corps just two days out of high school at age 17.  Upon returning to Vegas he enrolled at UNLV to study Electrical Engineering at which time he landed a job bussing tables at Mandalay Bay's China Grill. This would be the start of his love for the hospitality industry. Peter moved on to open FIX at the Bellagio, advancing from a busser to a runner; a back server to a front server in three years. He continued to gain more and more experience from Michael Mina, Strip Steak, Yellowtail and other prominent restaurants and chefs around the city.  Some years he even commuted between Vegas and LA weekly to work simultaneously at spots like SBE's XIV in Hollywood. At 25 Peter made the jump into management.  Starting as a floor manager at Society Café in the Encore, he later opened both Jaleo and China Poblano with Chef Jose Andres at the Cosmopolitan. In 2011, with the opening of Hyde Bellagio, Peter not only took on his first major nightlife role, but also moved into his first role as a General Manager. After three years at Hyde, he continued with the SBE family to open Double Barrel Roadhouse in Monte Carlo, and then his final GM position a year later at the SLS's Cleo restaurant. During this time Peter was also the Casino Beverage GM for the hotel. In January of 2016 Peter was approached by his long time mentor Oliver Wharton (Fix, Yellowtail, Society, Jaleo, China Poblano, and Hyde). Now with nightclubs, restaurants and entire hotel beverage programs under his belt, it was time to talk about taking the next steps in his career.  Today Peter is the Senior Vice President of Development for A Perfect Bite, Inc. In addition to helping develop new concepts, A Perfect Bite Inc. helps to run the management, operations, development and/or expansion of venues and companies within the hospitality and food & beverage industry.
