Creation and design of bar and beverage structure; Establish business relationships and accounts with suppliers; Hire and Train Beverage team; Compose a wine list, liaising with the Head Chef to compliment the menu style; Implement systems of service structure and bar functionality; Organise tastings and product knowledge sessions for staff with Suppliers; Create programs for Stock Control, Budgeting, Costed Rosters, Margin and Profit Calculation, Supplier Schedule and Contact Register; Assist a first-time Owner/Manager with establishment of Liquor Licensing Protocols and Requirements.

Opened the venue and established the beverage department. I joined the team when we were still building the venue. I designed the bar layout, chose and purchased all equipment, established business relationships with suppliers, builders and maintenance companies. I hired and trained all baristas and barstaff. I created stock control spreadsheets for stocktake, projections, profit margins and overheads. I organised storage solutions for effective use of shared cold storage.Creation of comprehensive wine, spirit, beer, lists, aswell as a large list of signature cocktails and fresh juice health mocktails.
