Over the past two decades Pete Stanton has cultivated a vast range of experience in the New York City restaurant scene. The last fifteen years Pete has made a name for himself as a bartender, curator, educator and manager of beverage teams over two very successful national restaurant groups. Pete has added to his tactical beverage experience with several educational endeavors including accredited sommelier school, advanced bar certification, and memberships to service industry trade groups. Cultivating partnerships with distilleries and breweries he has collaborated on numerous private barrel programs and special beer releases. Building five major bar programs from the ground up has honed an eye for relevancy in rapidly changing industry. Evolving from a pure bartender to manager has helped Pete assemble successful beverage programs building on practical service experience and a numbers based analysis of performance. As a consultant Pete has helped opening programs shape their identity by developing menus, training staff and designing work spaces. Since 2016, Pete has been at the helm of Michelin starred Ai Fiori's award winning bar program. He quickly transformed this space with a seasonal, cocktail-driven menu featuring over 600 fine and rare spirits. Over the years his pursuit of bar craft has been recognized by several publications and media such as GQ, Esquire, Forbes, Wall Street Journal and the Today Show.
