E-Spain is an Erasmus programme in which I worked extremely hard to be in with a chance of getting accepted. It was an all expenses paid trip to Valladolid to work in one of the top 3 tapas bars in the whole of Spain (Villa Paramesa) for a month. I gained amazing knowledge of Spanish culture, cuisine and way of life while honing my culinary skills to take home and adapt into my own techniques.

5 years experience in Wild & Organic Irish cuisine while working mostly in The Strawberry Tree and in Italian bistro food from working at Armento Taverna in Macreddin. Wedding experience was a vital part of learning the ropes when I started here.
