I've been working inside this 5-star luxury hotel with 250 Rooms and a huge Events room The Montcalm (Royal House) located in Finsbury square for the ETM Group a big company that owns a brewery and many restaurant/pub/bar. In the hotel we had three different venues: Aviary (Fine dining/bar), Burdock (Bar/Restaurant,) Longarm (Pub with a microbrewery inside) and an events room with movable walls to host different functions or upgrading the capacity. I had the opportunity to work in all of them but mainly inside Burdock. My main duty was to assist and follow the directive of my manager and making sure that everything was done perfectly. Being part of the opening of this hotel helped me to understand the mechanism that runs it. Burdock: My job wasn't just taking orders, I was mostly in charge of the floor, taking care of shuffleboard bookings, dealing with guest and complaint trying to always give the best guest experience and a cheerful atmosphere. I worked on mornings and evenings shift, swapping duties during the day.I had to run the floor during breakfast and brunch and work as a barista meantime in the daytime. I’ve been working behind a “Minibar” for functions preparing mixes, wines and soft drinks and ensuring the maintenance of the hole space.Aviary. I've been working mostly during mornings as waiter and barista, running the Full English and Continental buffet or using the "A la carte" Room service: I've been working especially during evenings, the only person on shift so sometimes I had to deal with difficult and stressing situations. I had the task of delivering the food keeping high-quality standards, making sure that the Bar was stocked, the trays collected and to deliver the best guest experience. Events team. Taking care of events more or less important as weddings, private functions, meetings, parties. All about the organization and the smooth running of the function.

It's a very busy and huge restaurant, I started as a Runner with the task of delivering the food, keeping the HACCP standards and doing some preparation and after few months I started to work in all the other departments. As a waiter, I had to take orders in friendly manners and make sure my section was fine. As a receptionist I had to welcome and accompany the guest, keeping nicely the interior and exterior of the restaurant, confirming bookings, dealing with guest complaints and update the system with the current tables situation. As barback I had to make sure that the bar was running fine, take care of the glasses to be cleaned and delivered in the stations this all had to be done quickly.
