Current Managing Stewarding operations for 21 conference rooms, 2 big ballrooms and 8 F&B outlets/kitchens with IRD operations for total 878 guest rooms. Having ORCA (natural food digestion process) machine, responsible for the process. Effective cost control and profit generating skills by utilizing outdated stuff. Supporting and mentoring the department heads, Restaurant /Club /Bar managers, Senior Chefs. Ensuring all the stewarding operations of hotel are running as per HACCP standards. Handling all the HACCP monitoring system for kitchens. Temperatures recording, cleaning checklists. Reviewing breakage OS&E, Inventory stock for F&B outlets and Events. Performing Daily Cleaning/Hygiene inspection for all kitchen & F&B outlets. Maintaining high cleaning standard throughout all food preparation area. Preparing duty rosters, vacation planning, departmental payroll for stewarding department. Reporting all maintenance issues for kitchen to engineering department and making weekly report. Handling all the events set up from stewarding for 21 conference room, 2 big ballrooms (1000 Pax cap.).
