Onion (Allium Cepa) has been playing crucial role in culinary since ages. With the increasing demand of onion in the processing, demand of whole and sliced onion was found. To fulfill the demand, whole and sliced onions were treated with different strengths of Peracetic acid and Hypochlorite acid, they were packed in multilayered LDPE bag of 120 micron and stored in between 6C and 9C. This onion samples were microbiologically evaluated. The most effective strength out of the different strengths of both the acids was found. Also, an attempt was made to determine the shelf life of treated whole and sliced onions.
