Worked directly under the Executive Chef of a white tablecloth, 17 table restaurant to develop and routinely change the menu with regard to seasonality and locality of ingredients. Managed kitchen staff, ordering of produce, seafood, and meats. Calculated food costs and maintained running tally of P&L. Worked the line during dinner hours, overseeing prep, flow and execution.
