University of Texas Dallas Resident Dining Facility serving 2300 Residents. In addition we serve Faculty and Staff and UTD Campus Departments and their guests totaling up to 18000 meals per week. We also serve a vibrant growing Summer Conference Schedule. Since opening in the fall of 2014 we have improved satisfaction scores through continual change and adaptation to our student customers needs. Styles of service are varied and adapted to student needs on a continual basis. We continue to move our Resident Dining to towards several restaurant styles of service as an example our Café Fresca serving fresh smoked meats and grilled veggies in a variety of handheld breads with sides.

Campus in the Clouds above Chattanooga Tennessee. I was lucky enough to gain the position of Food Service Director at Covenant and held it three years until our move to UTD. The campus is the perfect environment for dedicated study in a perfect setting. A vibrant summer program of 500 to 1000 campers is a testament to Covenants great reputation. We served 8400 meal a week plus catering and special events during the school year.
