Flinging its doors open in Aug. 2020 in the midst of a global pandemic and unprecedented wildfires in neighboring counties, Elroy's Fine Foods (AKA The Uncommon Market) provided a reason for communal celebration when there was little. In partnership with a local farmer, vetted and assembled a cohort of vendors and direct sourcing relationships unique to the store that support mission-driven, minority-owned, and small to mid-size farms and producers. Despite persistent labor shortages, built a hyper-efficient department that is now generating $3k per day in sales. Curated a set of products 80% staples and 20% difficult to-find and highly flavorful esoteric heirloom varieties of fruits, vegetables, and flowers that, in two short months after opening, resulted in the department hit profitability goals. The produce and floral departments are now mainstays of the store.
