After more than 2000 years of interruption, the saffron is harvested again in the mountains of Judea near Jerusalem. Shin 314 is probably the most luxurious Saffron in the world. Because of the difficulty involved in producing it, saffron is considered the most expensive spice. It is produced from the stigma (female sexual organ) of the Crocus Sativus plant, which flowers only once a year. Each flower has only three stigmas, and they are harvested manually.
