I was within the Graduate Training Programme at Spirit Pub Company to become a General Manager. My role at first was to shadow and learn from the General Manager at my placement public house, The Old Leyland Gates. As well as this I held the responsibilities of a Deputy General Manager within the public house attending to the day to day running of the public house as well as sales forecasting, rota building and ordering of stocks. On top of this I was responsible for keeping the funcions of the public house up to compliant levels with the companys expectations. After a further placement at The Lane Ends public house in Preston, I was then being utilised as a relief General Manager for the North West Area. My last holding relief was at The Butchers Arms in Warrington after past reliefs at The Fleece Inn in Penwortham and The Park Hotel in Southport. My duties were that of a General Manager with full control and accountability of the public house. This involved people management including recruitment, training & development, rota planning and performance management as well as leadership and coaching of the team. I had control over the public houses' Profit &Loss and other financial reporting and had to control costs including ensuring the team correctly managed stock and wastage, costs, and monitoring other outgoings. I was responsible for ensuring every department operates inside company standards for quality and service as well as proactively promoting the business as needed to increase revenue streams.
I began as a Bartender, regularly serving up to 200 people. My duties included serving drinks, cleaning, stock-taking and replenishment of the bar as well as interacting with the customers, taking and serving food orders, and helping to ensure that they had the best stay possible. My duties increased as I was promoted to Banqueting Supervisor. I then accepted drinks orders, undertaking the setting up and cashing up of the tills on a daily basis as well as handling cash, having my own personal safe within the hotel. Further responsibilities included regularly running of the restaurant and bar. The setting up of the conference and function rooms and covering on Reception where also within my remit. As Supervisor, I undertook the running of various functions such as weddings, corporate events etc. and my responsibilities included the organising of staff, checking the satisfaction of the guests and dealing with any complaints or queries that may have arisen. As well as this, I carried out training of all new staff and prepared the staff rota. I then became the Duty Manager of the hotel. The majority of my previous duties still applied, however, I focussed more on overseeing all of the hotel’s daily operations. I took a larger role in the functions, running them single-handed, and undertake the ordering of all the alcohol stock that was needed, as well as the control of the entire hotel when the General Manger was absent. I held responsibility for the management of the Conference, Bar and Restaurant team, and effectively headed the team and directed them in a way that was in line with guest expectations. I had to ensure that all tasks were carried out paying particular attention to providing high quality customer service. I tried to maximise sales opportunities and encourage my team to do the same. I supported the team to work well and improve, not only the service to the guests, but themselves.
