After completing my degree at the University of Ulster, I secured the post of Technical Manager at Donegal Meat Processors, part of the Foyle Food Group in early 1998 and continued in this role until late 2007, when I accepted the position of General Manager with Edenmore Farm Meats. I remained there until taking up the post at TMC Dairies NI Ltd. (LacPatrick Dairies NI Ltd/Lakeland Dairies NI Ltd). My roles at LacPatrick Dairies NI Ltd, now Lakeland Dairies NI Ltd, covered the complete food safety, quality and environmental management of the site, with emphasis on ISO standards. This included all aspects of technical and environmental management including legislation, KPI’s, multiple management systems, manuals, operating procedures, work instructions, auditing, complaints, training, personal development programs, people management, European Trading Scheme, (now GB-ETS) European Registry, Climate Change Levy, Climate Change Agreements, NIEA environmental permits including IPPC and Greenhouse Gas Emissions. The roles also included dealing directly with customers and external third parties, e.g. DARD, EHO, NIEA, AEO, legal teams and consultants. I continue to be the factory lead on all environmental related project work. I successfully progressed through NIEA permit variations including the IPPC variations and I manage the NIEA Greenhouse Gas permit through phase 3 and now phase 4 of free allocations.Reviews included key food safety, quality and environmental KPI reports, inclusive of current and new company objectives and targets. I developed, implemented and continue to improve monitoring programs to capture, graph and trend various KPI’s e.g. environmental, overage, waste reduction, energy use, fuel use, production tonnes, COD loss and climate change. These are used and reported at daily meetings and in more detail during management reviews and staff briefings.Capex secured projects seen successful expansions to the ETP, increasing efficiencies and capabilities to meet its NIEA IPPC permit variations.I’m the site lead, in environmental activities, more recently, focusing on ETP expansions and NIEA permit variations to facilitate increase milk volumes supporting drying operations and waste/utilities reductions.
