I have worked in a craft a craft bakery from a very young age, picking up skills and information, and learning the value of Craft Bakery methodology. My food science degree was obtained from Nottingham Trent university, along with 18 months expereince working in both Australia and Canada. Both countries have a reputation for quality wheat in their respective fields. Most of my time was spent trying to understand what made each coutries wheat so different.During my travels i gained experience in University Research, Flour milling, Grain haulage, Grain elevators and product development, visiting CSIRO, CIGI and learning from some industry experts lon a range of topics.Since my return, I have worked for British Bakels, learning the workings of the bakery ingredients industry, and specialising in industrial bread process and improvers systems.I also have worked for Bowman's flour mill as technical support for the south. I learnt the science of heat treatment as well as the practical applications and potential pit falls. My responsibilities were mainly looking after a range of industries offering problem solving and applications support.I have also worked with Kate's cakes in Ashington, managing major projects for process and efficiency improvement, along with day to day trouble shooting.I am now working at Greenhalghs craft bakery in Bolton looking after NPD / Technical alas well as process improvement, among other projects.Specialties: Cereal chemistry, Bakery theory/application and methodology and continuous improvment.
