Brunella was a very successful business and a well known upscale Patisserie brand in the 80's. However, since neither the business nor the brand still had the same relevance of the past, the board asked me to evaluate the business in order to propose a shutdown, sale or reinvestment. The accomplishments of this project were:- evaluation of the branch financials, from the factory to the sales, including 5 remaining franchisees;- recruiting and selection of a new chef for updating the recipes;- designing the compensation model for the new chef and negotiation of contract clauses;- development of a new Business Case (financials);- selection of a Branding Agency for deciding what to do with Brunella Brand (keep it or leave it?);- selection of an Architecture firm to co-create a new store model respecting the new Brand guidelines;- prospecting and negotiation with Shopping Centers to decide where the relaunch of Brunella would be;- implementation of a pilot store in Shopping Ibirapuera -
