My experience in the industry has been exciting and a great learning experience. I have worked at German, Italian, and French restaurants as a line cook and pastry cook. The years I spent with corporate dining services was enjoyable. Currently I am working at Blair Academy. My main responsibility is to ensure that the meals are prepared to the strict dietary needs of the students and faculty. Previously I have supervised 6 chefs, 20 dietary aids, and 6 dishwashers at Bridgeway Senior Care Center. There are three floors with a kitchen on each floor that meals are served out of three times a day. I ran a 4 week cycle menu for the 125 residents that are among sub-acute care, long term care, and the dementia unit. All the therapeutic diets are prepared fresh on site.
