 Manage daily operations of the establishment including Front of the House, Back of the House, Catering, Banquets, Grill/Dining Room, Pool House, and Beverage Cart. Full supervision of 70 employees in all daily activities and services. Supervise all budgetary functions and maintain records to support budget objectives. Direct sales of high profile food and beverage department generating over $4,000,000 in yearly sales. Order all inventory necessary to perform food and beverage job responsibilities.  Process invoices and cost of goods in appropriate categories. Oversee and review all staffing programs within food and beverage to insure guest satisfaction and stay within budgeted guidelines. Hire, train, coach and motivate all food and beverage staff. Adjust menu pricing according to cost of goods to increase total revenue. Assess inventory, food, liquor and cost of goods on a monthly basis. Responsible for monitoring the daily operations of all food and beverage outlets; managing the staff and the execution of all member and guest events ensuring that all guests needs and requests are met. Encourage a professional, accountable, and profitable working environment for all employees. Schedule all staff based on the required needs of all outlets to ensure customer satisfaction, quality and consistency are executed. Maintain open communication with members, guests, and teammates. Oversee all banquets and dining including set up, excellent food quality, superb atmosphere and presentation, as well as guest satisfaction, and teammate interactions with guests. Define performance requirements and develop action plans for achievement of goals. Monitor staff performance.
