After winning the John Ruffatto Business Plan Competition in 2011 I opened the first Five on Black – fast casual Brazilian restaurant in 2013. Over the course of seven years we now have 5 locations across theState. I have led and managed the growth from idea creation, start-up, process and system creation, expansion, supplier relations, organizational development, lease negotiations, land and building development, and continued management and development of staff and administrative team of close to 100. Setting up accounting systems to track weekly food and labor costs along with other key margins in order to accurately bonus out our General Managers. Continually evolving, learning, and growing to meet the demands of a growing business. Setting up key personnel and systems to effectively manage sustained increasing YTD growth numbers while keeping top of industry standards. Becoming one of the first businesses in the state to compost front of house and back of house waste. Strategically innovating and re-investing in stores. Most importantly setting the tone of conscious capitalism and a culture of employee first management.
