During the course, examples from the field of community-based and transformational tourism are used to demonstrate what responsible tourism development can look like, social justice is explored as a process rather than an outcome, and the social and solidarity economy is offered as a tool for social justice. Students also have a unique opportunity to use the Flourishing Business Canvas to apply the theoretical knowledge gained in the course to collaboratively develop a creative concept for a sustainable food tourism enterprise. As part of this process, they consider how the fair (re)distribution of resources, opportunities, privileges, and responsibilities associated with their business idea will positively impact the local community.
