Booze 2 Go was a chain of off-licences with eight outlets in Dublin City Centre. The company modeled itself as a ‘no frills’ operation which sold beers, wines and spirits at extremely competitive prices. The company was run by an acquaintance of mine who asked me to come on board as operations manager to prepare the company for saleOperations Manager Bars/Off-Licences Dublin City Centre. My work involved re-opening 2 old bars in the Liberties area of the city centre, running those and 8 off-licences scattered throughout the city. My main body of work included the following Total re-structuring of the workforce of forty two employees Re-working of the company rosters which saved over one hundred and fifty hours per week Employment of bar staff to run the two new bars opened Negotiations with existing suppliers on prices and delivery times Opening accounts with new suppliers including all major breweries Setting up proper payroll systems working with the existing bookkeeper Setting up a stock control system as there was none in existence Preparing reports for end of week meetings.

Glenbeigh Sports Hall was opened in February 2007 through a combination of local fundraising and considerable grant aid sanctioned by the Irish Sports Council and The Department of Arts, Sports and Tourism. The hall was envisaged as the fulcrum of local sports and social activity in the immediate mid-Kerry area. Manager and Fitness Consultant.I was employed on an initial six month contract to manage the new sports hall in Glenbeigh. My work there included  Managing the hall budget and preparing monthly financial reports for the hall committee I was involved in sourcing all the new equipment for the facility.  I obtained quotations for all equipment and used these to apply to the relevant government departments for sports capital funding. I opened a gym on the first floor of the building using the sports grant and ran this commercially. I dealt with the national Governing Bodies of all sports involved in the area and through them and the Local Sports Partnership I promoted all hall activities. I employed any extra staff required for the summer schools. I sourced and purchased bouncing castles and started the profitable party business which is still running I set up new sports clubs for the area such as Basketball, Badminton and Volleyball.  I introduced Futsal to the area. We were the first area outside of Dublin to do so. I helped organise a Futsal tournament with Behy Rovers on Monday nights as a fundraiser. I ran the community bingo on Wednesday nights. I stocked and operated the shop in the hall during larger events such as basketball blitzes, Christmas and Halloween parties and Scor events I helped organize and run the first Christmas market in Glenbeigh

A family business based in Killarney which has evolved over the years through a variety of different ventures. The Granary Bar, Restaurant, Music Venue, Holiday Apartments. 2001-2004 I was responsible for overseeing the development of this project, including its design and construction, from a green field site to the building as it stands today. I was responsible for all initial budgeting and building costs. Part of this responsibility involved managing fortnightly site management meetings between all contractors, architects and sub-contractors. When the building was open my responsibilities extended to supervising the operating costs and the management of supplier accounts. I was responsible for the internal layout and decoration of all areas including the main bar, restaurant, kitchens and upstairs apartments. I employed all the management staff and delegated the hiring of all ancillary staff to them. At one point we had twenty six people working in the business between full, part time and seasonal staff. I supervised staff training which included basic table service, HACCP procedures and manual handling. When we moved into hosting live music I was initially responsible for booking all the live acts.  I was in charge of all marketing for the business including press releases, publicity and promotion. This included compiling and submitting ads to local publications and running a small team of people giving out flyers and passes to events on the streets of Killarney.
