In 2025 the European Ham Academy will establish a branch office in Italy for educational purposes of all Italian DOP hams under the name - Accademia del Prosciutto.
There has always been too much focus on Parma ham and San Daniele from Friuli sold sliced in supermarkets around the world and not enough attention on all the other cured hams, but make no mistake Italy has a much more interesting history and amazing hams to offer handmade by small family run companies from the mountains close to the Swiss border and all the way down to Sicily. We will bring these almost secret and not internationally known hams to your attention!
The Black Pig Prosciutto from Culatello in Colorno, Cinta Senese in Toscany or Apulo-Calabrese and Nebrodi in Sicily are in many ways on the same high level as their (brother and sisters) world famous Pata Negra from Spain
