L’aire d’appellation, située entre 800 et 1 500 mètres d’altitude, est centrée sur les terres volcaniques du Massif du Sancy, du Cézallier et de l’Artense, à cheval sur le Puy-de-Dôme et le Cantal et constitue l’une des plus petites zones d’appellation d’Europe.
En 2019, 7971 tonnes de Saint-Nectaire fermier et 6396 tonnes de Saint-Nectaire laitier ont été commercialisées. Elles sont produites par 208 exploitations fermières, 256 exploitations laitières, soit plus de 840 exploitants (individuels ou associés), 20 affineurs et 4 laiteries. L’AOP Saint-Nectaire est la 3e AOP française au lait de vache et la première appellation fermière en Europe.
