L'Interprofession du Gruyère regroupe les partenaires de la filière que sont les producteurs de lait, les fromagers et les affineurs. L'interprofession est le garant de la défense de l'appellation d'origine protégée et de son respect. Ses objectifs principaux consistent à gérer la quantité de Gruyère AOP, à lui assurer une qualité sans faille, à fixer des conditions de mise en marché et à promouvoir son image en Suisse comme à l'étranger.
L'Interprofession regroupe 1900 producteurs de lait, 150 sociétés de laiteries, 165 fromagers et 11 affineurs. Sa gestion est basée sur le principe de consensus entre les trois partenaires de la filière.
