The Dining Nutrition Ambassadors were established as a group of students who could help guide students to understanding nutrition in relation to on-campus dining options. I was responsible for establishing the processes of the group, its funding, identifying and selecting its membership, and support the overall functions of the group. This group is still running smoothly to this day. Once that project was self-sufficient, I was tasked with the research and development of a nutrition resource center for our campus. This was intended to be a space to support students in the areas of nutrition and food insecurity. Beyond a space to seek support, it was also a space for organizations on campus assisting Auburn's food insecure students. This required research of similar establishments, acquiring feedback from involved parties, communicating across many departments across campus, and acting as a liaison and spokesperson for Tiger Dining. I was able to lay the groundwork for the project, and it is now fully functional and serving the needs of Auburn's food insecure students. Show less
