With over 28 years of experience in the culinary industry, I am a passionate and skilled corporate chef, chef instructor, director, and partner who strives to create memorable and delicious food experiences for diverse audiences. My mission is to create delicious, popular and profitable food as we as educate, inspire, and empower the next generation of culinary professionals. I have promoted sustainable and responsible practices in a wide array of culinary/food & beverage fields. I am currently a contract chef instructor at the University of Tennessee, Knoxville, wh I teach non-credited professional and personal development courses on various cuisines and techniques.Recently, I was the director of culinary at Harrison Chilhowee “King’s” Academy, where I helped oversee the kitchen rebuild and led the team to reintegrate a standard service model. I was also the managing partner at Mama C's Gluten Free Goodies, where I worked with the ownership to build the business in all areas related to an artisan gluten free bakery. I leveraged my skills in marketing, operations, customer relations, concept development, and wholesale sales to grow the brand and expand the product line. I also planned and developed new menus and assisted in the buildout of Mama C's Café as well as a diverse portfolio of prior experiences.
