Food Structure, Digestion and Nutritional AvailabilityWhat are the critical elements of doing science? Novel research that explores nature and solves problems are the first step, but this is not enough unless it is followed by a clear strategy of communication and implementation.I have a strong interest in science communication, public speaking, and research in dairy food chemistry. My current position is at AgResearch researching on food structure, digestion, and nutrient delivery. I have research experience from previous positions in universities in Australia, New Zealand, Canada, and the United States, the Australian CSIRO government research centre, and the dairy industry in Australia liaising with food companies on commercialization of research projects.New Research: My research focus is in the emerging field of colloid and surface chemistry reactions in food products. This new area of research focuses on understanding how the structure of food impacts upon both the bioactivity and bioaccessibility of healthy components, and the development of flavor and texture reactions.Science Communication: Since 1998 I have organized or co-organized 46 food science conferences in Australia, New Zealand, Ireland, China, Korea, Norway, Canada, Lithuania, and the United States. I currently serve on the editorial board of the International Dairy Journal. My university teaching scores from California State University (90% of evaluations) are in the top decile.Research Specialties: Cheese science and technology; dairy ingredient interactions; rheology and texture of food; colloid and surface chemistry in dairy food products; impact of microstructure on flavor development; emulsion science; enzymatic reactions at interfaces; and structural nutrition: how foods structure impacts upon digestibility and delivery of nutrients.Professional Interests: Leadership and development of governance in non-profit societies. Public speaking on food science and technology topics of interest to the general public, including conferences and media interviews.
