Responsible for requesting documentation from third parties, Kosher & Halal certification, creating/updating statements for GMO, Allergen, Product Data, and Nutrition. Oversee the hot fill beverage process, product quality, sanitation, and laboratory setup responsibilities in initial plant start up. Duties include developing and implementing SOP’s, SSOP’s, and GMP’s, training employees in production of product, conducting cycle counts (inventories), testing of product for conformity, brewing/batching of product, retention sampling, investigations for customer complaints, product date coding (with equipment responsibilities), and sanitation monitoring.

Analytical and sensory testing of in process and finished product. Primary duties included micro-bacterial swabbing, sample taking/receiving, density, fat, moisture/solids testing, insuring proper weight, labeling, package integrity, and ensure customer product specifications.

Supervised 15 people in a union dairy manufacturing facility. Responsibilities included daily shift meetings, Kronos time keeping, daily scheduling of production run, batching order of different formulas, coaching/counseling, handling of grievances, coordinating product changeovers, and overtime planning. Experience with dairy sanitation. Laboratory analysis responsibilities with micro-bacterial swabbing, sample taking/receiving, preparation of samples, butterfat, moisture/solids, micro-bacteriological preparation and plating (Standard Plate (SPC), Coliform (VRB), and Yeast/Mold), Titratable Acidity (T.A.) of milk and cream, and testing of incoming raw milk for (Beta lactem) antibiotics. Production floor quality testing to insure proper weight, crimp, gassing of product, and meeting labeling requirements. Knowledge of GMP’s, SOP's, HACCP, OSHA, and safety.; Industry Supervisor – Certified by the Michigan Department of Agriculture to test raw milk for the presence of antibiotics and to accept or refuse loads based on tests.

Laboratory duties included sample taking/receiving, preparation of sample(s), butterfat, moisture/solids, pH, wet chemistry, micro-bacteriological plating (Standard Plate (SPC), Coliform (VRB), and some Phage), and Titratable Acidity of milk, cream, whey, and condensed whey. Testing of incoming raw milk for (Beta lactem) antibiotics and somatic cell count (as part of milk grading). Production floor duties include dimension, temperature, and weight measurements.

Took part in Integrated Pest Management (IPM) tests using biological insecticides. Compiled an Import/Export rules book listing all agricultural requirements. Published a pamphlet on the proper mixing (dosage), plant usage (type and application), and pests controlled for all pesticides found in Belize. Organized, updated, and computerized the Belize National Insect Collection. Visited large and small scale farmers in Belize with crop/insect problems to help correct and improve yields.
