• Oversee $9 million dollar annual revenue Banquet operation in excess of 100,000 indoor and outdoor serviceable square feet
• Manager a staff of over 60 servers and bartenders, 4 captains and 3 Banquet Houseman Managers including additional 10 houseman

• Responsible for maintaining operational objectives of a $7 million dollar facility with 4.4 million dollars annual sales volume, serving over 3,000 meals daily.
• Accountable for recruitment, hiring, and development of a 70 member team.
• Implement and monitor food safety systems in adherence to HAACP. Maintained a 93.3% compliance rate to Steritech safety audits over 90% industry standard.
• Develop a four week cycle menu for 7 different food stations serving meals three times a day
• Oversee payroll keeping it in line with budgeted numbers
• Ensure all accounts payable received payments for any invoices

• Oversee direction of 4 separate food and beverage operations within the hotel (3-meal restaurant, In-Room Dining, Coffee Bar & Lounge).
• Develop and maintain timely work schedules, food preparation, cost controls, quality, and inventory controls, payroll budgets, menus, business forecasts and analysis.
• Directly responsible for profit and loss.
• Oversee hotel-wide roll-out for MICROS 9700 update, acted as the primary contact for the on-site programmer
• Develop and implement training manuals for restaurant and bar environments.
• Direct one Supervisor and one Assistant Manager on staff.
