I currently perform an array of different jobs and duties at The Red Elephant Pizza and Grill - Kerry Forrest as an assistant general manager. I take care of the FOH with duties such as: greeting customers and helping with our hostesses and our curbside to-go operations. I manage the serving staff and bartenders to make sure our customers are being taken care of at the high standard we set at Red Elephant. I also expo food on a nightly basis. I kitchen manage twice a week and work with writing and executing our daily prep list and making sure our cooks are preparing food properly and in a timely manner. Administratively I pay bills, make sure our labor is running at the percentages we want and that our food cost is also doing the same. I work with our weekly and monthly budgets to ensure that we meet our performance goals. I work with Performance Food Group to order all our food. I also work with the local produce and bread distributors daily. Finally, I run a mid-month and end-of-month inventory count and I also have learned how to work on and break down a P&L chart.

Panama City, Florida Area

I got promoted to a FOH manager and moved to Red Elephant's Panama City location to help manage their store there. In my year at Red Elephant-Panama City, I learned a lot of what I'm performing today. I wrote schedules for both the FOH and BOH. I ordered through our food distributor and ordered produce and bread on a weekly basis.

I began working at The Red Elephant as a dishwasher in February 2013. However, with the determination to learn and progress in my cooking skills I moved up fast. I moved from dishwasher to pizza cook. I then moved from a pizza cook to the salad station; with this I learned the jobs of a fry Cook and the sauté position. I then moved on to the grill, which was the top slot in my kitchen. I then got a promotion to FOH manager and I'm now an Assistant General Manager.
