I love cooking because it is one of the most leveling of aspects of life. Everyone eats, and everyone alive is good at it. You may eat more or less than I, but eating is a fundamental requirement of life. By preparing delicious meals, I can create an opportunity for communities to come together and all be equal. By eating a meal together, you are quite literally sharing a life giving substance. In case you can't tell, I study hospitality in my free time. I have always been passionate about cooking. At 12, I started preparing meals for my family 3-4 times a week. I joined the kitchen committee at church and cooked at camp in the summers during high school. Choosing a degree for college was an easy choice- of course, I was going to pursue culinary arts as a field of study. As part of my culinary arts degree, I worked on campus at the Keeter Center, a hotel/ conference center/ restaurant/ bakery/ coffee shop. While there, I worked every position in the kitchen in order to receive a well-rounded education. This included bakery, hot line, garde manager, and banquets. I also joined the WeCare committee, a student led organization to facilitate communication between the student workers and full time staff. For over 8 years, I was the food service director at a year-round camp and conference center. This position afforded me many opportunities to grow as a professional. I not only prepared meals, but also was in charge of menu planning, budgeting, recipe development, cleaning schedules, and waste management. Writing training seminars, policies, and procedures was also an important part of my job. Every summer, I trained approximately 70-80 staff on proper food safety and kitchen cleaning procedures. I also taught a course on hospitality, which I created. I developed and implemented a special diet policy, and I became an expert at cooking for almost every special diet.
