Casual training position for leading Jamaican rum company, producers of J. Wray & Nephew White Overproof & Appleton Estate rums. This role required a thorough knowledge of J. Wray & Nephew Overproof Rum & the rum category including production, history & usage in cocktails. The main aim of role was to educate & inspire bartenders & spirits buyers across the South of England.

Natural wine bar, restaurant & cocktail bar specialising in local, sustainable produce, natural wines, craft cocktails & beers. Responsible for the overall management of the business in close collaboration with the two owners. Implemented systems & assisted to increase turnover from c£12k to c£20k per week (average). Drove high standards throughout the business. Good communication was essential between the bar, floor & kitchen. This role combined office work, bartending & managing the restaurant during service. Duties: • Office based administration, marketing, social media, menu writing, ordering, product selection, HR. Responsible for 25 staff• Bar – Provided high quality craft cocktails, wine service, customer service, staff supervision• Restaurant – sommelier service, waiting tables, staff supervision, maître d' functions

High-volume cocktail bar located within an 80-bedroom ‘design’ hotel. Worked as part of the senior management team within this newly built hotel.
