Manage day to day operations in 160 seat fine dining Italian restaurant owed by famed chef Scott Conant. Manage payroll, scheduling, ordering and maintain food and beverage costs to owners demands. Also help Sommelier with Wine inventory and costs. Maitre'd at nights with focus on service and guest relations. Work with Excel and word, manage Open Table and update Micros POS system.

Worked with GM in managing local sports bar and restaurant on a 1 year work permit

Miami

Help GM in running of 350 seat italian steak house on Miami Beaches Ocean Drive. Focus on service and table side serving. Eventually taking over the running of 800 btle wine list, both selling and ordering of wines both high end and low end. Managing a team of 20 servers, 10 assistants, 4 food runners and 6 bartenders on busy weekend nights. Looking after high end clientele from local sports stars to movie celebrities.
