Within these roles, Sean was responsible for managing the Gordon Ramsay Restaurant, the Sugar Loaf Lounge and McGills Irish bar outlets within the Ritz-Carlton Powerscourt. Sean was also responsible for running the Banqueting bars for all events ranging from 20 people upto 1,000 people. Sean was also responsible for the overall control of the Beverage Cost in the Ritz-Carlton Powerscourt. This involved strict implementation and management of stock control practices in all F&B outlets along with the negotiating of prices with suppliers on beverages supplied to the Ritz-Carlton Powerscourt. Sean ensured the beverage cost within the hotel was well within budgetary targets month on month.

As part of this role within the hotel I manage a large team in the professional yet refined service of alcohol and food to our guests. This role also includes the management of the Residents Bar where I am responsible for the devising of food menus along with the Executive Chef. I also assist in the management of Banquet and Fine Dining events in the Gordon Ramsay restaurant and meet with suppliers on a regular basis in identifying the best food and beverage products to be served at the Ritz-Carlton Powerscourt. This role requires that I have excellent communication, financial, organistional and leadership skills so to assure the positive performance of my team and department.
